recipe:sultana bran muffins

It's been pretty quiet around here, mostly because real life has been pretty busy. I've had work and Guides and meetings and catch ups with friends, I've visited my parents and we've had visitors here.

That's not to say I haven't been making stuff.

On Monday night after we got back from grocery shopping and had put everything away I had to preheat the oven to cook dinner. At that moment, the recipe on the side of the Coles (store brand) "bran and sultana flakes" cereal box caught my eye - Sultana Bran Muffins. So I mixed up a batch, ate half the batter before I cooked them and generally filled up on anything but veges for dinner.

They turned out well, although B commented that I could have added more sultanas. Overall I consider that a success. Although I did forget to take a photo once they came out of the oven.

Sultana Bran Muffins
Prep time: 15 minutes
Cooking time: 18-20 minutes
Makes 12 regular muffins

1 1/2 cups self raising flour
1 1/4 cups of Bran Flakes with Sultanas (Coles brand here)
3/4 cup of firmly packed brown sugar (I used a little less than 1/2 a cup)
1 teaspoon mixed spice or cinnamon
1 large green apple, finely chopped (I only had red, so that's what I used)
3/4 cup low fat milk
1/2 teaspoon of lemon juice
75g butter, melted
2 extra large eggs, lightly beaten
1/4 cup Bran flakes with sultanas, extra

1. Preheat oven to 180C conventional/160C fan forced.
2. Mix dry ingredients and apple together in a large bowl.
3. Combine milk and lemon juice in a separate bowl and stir; add butter and eggs. Pour onto dry ingredients and mix until just combined. Spoon into greased regular muffin pan. Sprinkle with remaining cereal.
4. Bake for 18-20 minutes until golden and puffed.
